Up, Up, and Away

Yesterday, my weekly meal plan looked a little pathetic. I told you all that something was going to happen but did not say what.

Oh yes, I will be on a plane tomorrow... headed to the mitten state. 

I am going to be going back 'home' to visit family and friends. It just so happens to be my Dad's birthday on Tuesday as well so I will be able to knock a few things out of the way. 

I am a little bummed to be going by myself and leave my two 'babies' behind. I know they will both be fine plus Kyle is planning on doing a Daddy daughter Puppy weekend in Reno. It will be a long week away from the Hubs and Puppy and I know I will be looking forward to seeing them before I even board the plane.

Because I am going out of town, I will also be away from my blog. I hope everyone enjoys the rest of the week and has a fantastic weekend.

Easter Decor

I feel like Easter is such a fun holiday. The bright and pastel colors are so happy. I do not have a lot of decorations for any holiday besides Christmas (which I do not like), but a few can go a long way.

 Another favorite part of Easter, candy!!

Am I decorating too early? No big deal. It's either now or the week of Easter. Just because I love all the colors, they are going out now so I can enjoy them.

5k Run

Well, it is official. My Hubs and I signed up for a 5k. I am so excited for this and we have been training working out pretty regularly. However, this is not a regular 5k. I mean there is a start and a finish, but it is not just running. The race we signed up for is... The Survivor Mud Run.

I think we are crazy but there is no backing out now.

Has anyone heard of this? Or has anyone done this race before?

 This is what it looks like. There are 16 obstacles, including two mud pits, a woven web, hurdles, 'survivor' slide, log jumps, and mystery obstacles that we will find out the day of. Sounds like fun, right?

They have these races across the country. I suggest going to their website to check out if any are near you.

Happy *Puppy* Birthday

Today is a very special day. A day that would make a mother owner proud. Today is my puppy's birthday. She is three years old and is going to get extra spoiled on her special day.

She has grown up so quick and is so much fun. She travels well, considering she has been to five states. What a blast it is to have a puppy!

Salmon Recipe

As promised, I wanted to share with everyone a recipe that my husband and I tried this weekend. It is a big winner in our book and will be making this bad boy again.


Ingredients:
- Salmon (about 1/2 lb per person without skin)
- 2/3 of a sheet of Puff Pastry (thawed)
- Pesto (roughly 4 Tbs or to taste)
- Slivered Almonds (to taste)
- Salt and Pepper

Directions
- Preheat oven to 400 degrees F
- Season Salmon on both sides with salt and pepper (to taste)
- Separate the two pieces of puff pastry and roll wider if needed to fit size of salmon
- Place puff pastry and salmon on lined and sprayed baking tray making sure that none of the items are touching
- Top salmon with a sprinkle of slivered almonds
- Bake for 10-13 minutes or until puff pastry is golden brown and salmon is cooked thoroughly
- Place puff pastry on plate, top with pesto, then salmon
- Enjoy while it's still hot

We paired this dish with brussels sprouts and Zinfandel wine. Yum!

Here's to another week of meals... The only thing that I am excited about this week is that our grocery store is stocking up on fruits and veggies for the season.

Chicken Stir Fry with Brown Rice
(Veggies include carrots, corn, green bell pepper, orange bell pepper, and green beans)

Roasted Garlic Spaghetti with Salad

Ground Beef Tacos

Grilled Chicken Salad

Mac 'n' Cheese with Salad

Weekend [Without Words]

Sunday was a special day because it was our seven year dating anniversary. I find it hard to believe that I have known my husband for just over 7 years. We celebrated by driving 4 hours home from Reno.
