Well Happy New Years! Remember my post about the 15 reminders for 2015? I shared these in lieu of New Year's Resolution. We all know that resolutions don't last longer than 2 weeks. On my list I wanted to remind myself to consciously take care of my body and to try new foods. Well bam, I knocked both of those out yesterday. 

I made this delicious loaded rice bowl with ALL THE VEGGIES possible. It was super tasty, super refreshing, and looked beautiful. And just because we are friends, I wanted to share the recipe with you. Enjoy!

Loaded Rice Bowl Recipe

Loaded Rice Bowl

Ingredients:
1 cup Jasmine Rice
10 spears Asparagus, thinly chopped
2 Radishes, thinly sliced
1/2 Red Bell Pepper, thinly chopped
1/4 Red Onion, thinly sliced
1 handful Chickpeas
1 handful Slivered Almonds
1 handful Feta Cheese

1/4 cup Lemon Juice
1-2 tablespoons Extra Virgin Olive Oil
1 teaspoon Herbes de Provence
Salt and Pepper to taste

Directions:
In a medium saucepan, boil 3/4 cup water then add rice. Cook for 10 minutes covered then add the asparagus. Cover and let rice cook completely (roughly another 10 minutes).

Mix Lemon Juice, EVOO, Herbes, Salt and Pepper together in a separate bowl. Pour onto rice once it is cooked. Mix in all other toppings - serve and enjoy!

  2. It was definitely very tasty and beyond easy to make. If you are in a pinch for dinner, this is a good go to option. :)
