I've never been a big fan of beets. Maybe it's because I was never introduced to them as a child or because I believe their earthiness is an acquired tasted. It wasn't until I learned about the amazing benefits of beets to start incorporating them into my diet.


The first way I incorporated beets was into my juices. I bought a juicer a few years ago and experimented with all sorts of fruits and veggies. A winning combination is lemon, kale, ginger, apple, carrot, cucumber, and beets. It's amazing and zippy.

Now I am experimenting with different ways to include the amazing and wonderful beets without compromising my taste buds. What kinds of meals can I add them to? What kind of desserts can hide the magical beets? There are so many ways to sneak these little guys in, and my favorite recipe is Beet Brownies.

They are decadent and cakey, sweet and buttery. To me, this is the perfect kind of brownie. And I promise you, you will never know that beetroot juice was an ingredient.

Before you roll your eyes or start gagging at the thought of beets in your brownies, let me explain. Beets have been know to lower blood pressure. In fact, drinking beet juice may help lower blood pressure in a matter of hours. Crazy, right?!

Another great thing about beets is that they can boost your stamina. I bet you never thought that eating a brownie could be beneficial prior to working out!

And lastly, beets can help reduce inflammation, they have anti-cancer properties, are rich in nutrients such as fiber, and supports your body's detoxification process. For all of these reasons, I encourage you to try these beet brownies or in some other way incorporate beets into your eating habits.

Beet Brownies
Original recipe from a traveling Wife
makes 9 servings - nutrition per slice: 287 calories | 12.4g Fat | 41g Carbs | 3.5g Protein

Ingredients:
- 2 sticks unsalted butter
- 1/2 cup Swanson Organic cocoa powder
- 2 eggs at room temperature
- 1 cup brown sugar
- 2/3 cup Swanson Organic beetroot juice
- 1 teaspoon vanilla extract
- 1 1/4 cup whole wheat flour
- pinch of salt
- 1 1/2 teaspoon baking powder
- 1/4 cup powdered sugar

Directions:
- Preheat oven to 350 degrees F
- Over medium heat, melt butter in a medium saucepan and remove from heat
- Whisk in cocoa powder, eggs, brown sugar, beetroot juice, and vanilla separately until smooth
- Slowly whisk in flour, salt, and baking powder
- Prepare 8x8 baking dish with non-stick cooking spray and dust with flour
- Pour brownie mixture into the prepared pan and bake for 30-35 minutes
- Allow to cool completely, then dust with powdered sugar

Wow, I never would have thought of adding beets to red velvet cupcakes. That sounds amazing! Now I need to head to the store to get supplies. :)
Crazy how amazing beets are right? I'm all about them. I make a red velvet pancake with beets, pretty much the best thing ever!

I never would have thought of putting beets in a brownie! I do love beets though. They are one of my favorite things to add to a salad.

It's sooo sneaky. :) I'm still learning to enjoy beets without having to mask their flavor.
Love beets in home baking, and these brownies look fantastic!

I've used beets in a chocolate muffin recipe I have, the flavour and texture is amazing! :-)

Oh, they are yummy! I'm going to have to try chocolate muffins with beets. I'm learning that beets can go in practically every and anything.

Thanks, Jess! The wonderful thing about brownies is that you can adjust the texture with different size baking pans, cooking temperatures, and cooking times. I'm still trying to learn to love beets on their own. :)

I LOVE red velvet cake made with beets! I try not to use artificial dyes so it's perfect. I will definitely be making beet brownies in the future.

Seriously, I never thought to use the beets as the coloring for red velvet. I need to get on this ASAP.
