Deconstructed Caramel Apple Cheesecake Stackers are made with no added sugar, a simple three-ingredient caramel sauce, and can be made in advance. They are fresh, sweet, salty, and savory.

I'm a grazer! At gatherings, you can usually find me hovering around the food table grabbing a bite of this and a bite of that. I like to sample it all, but my favorite options always are the bite-sized ones. Things like cheese and crackers, fruit, veggies, mini-quiches, petit fours, etc. Those all are my jam!

The stackers are a great option for any party because there is no added sugar, there is no baking involved, and the caramel sauce is sneakily good for you, made with only three ingredients. Plus, who doesn't love cheesecake?!

My surprise ingredient for the deconstructed caramel apple cheesecake stackers is maple syrup. This creates a sweet enough treat without having to add all that extra sugar. And the caramel sauce, it's made with maple syrup, coconut milk, and vanilla extract. Yep, you read that right, just three ingredients for a perfect caramel sauce!

Deconstructed Caramel Apple Cheesecake

Recipe by a traveling Wife
Prep time: 15 minutes
Cook time: 30 minutes
Yield: 10 servings (2 stacks per person)
Nutrition (per 2 stacks): 175 Calories | 11 g Carbs | 14 g Fat | 3 g Protein | 4 g Sugar

Ingredients
  • 20 RITZ Original Fresh Stacks crackers
  • 1 can Coconut Milk
  • 3 tablespoons Pure Maple Syrup
  • 1 tablespoon Pure Maple Syrup
  • 1 large Apple, of your choice, diced
  • 1/2 Lemon, juiced
  • handful Slivered Almonds
Cooking Directions
  1. In a medium saucepan, combine coconut milk, maple syrup, and vanilla extract over medium high heat. Bring mixture to a rolling boil and cook down for 15-20 minutes. The caramel sauce will start to brown but is not done cooking until mixture pulls away from pan when scraped with a wooden spoon (see image below). Transfer to a bowl or mason jar and allow to cool for 30 minutes.
  2. In a large mixing bowl, whip softened cream cheese and maple syrup. Place cheesecake base into a piping bag or sandwich bag and cut a corner for piping.
  3. Dice up your apple and mix with lemon juice to stop the apples from browning.
  4. Start building your stackers - place one RITZ Original Fresh Stacks cracker on platter, circle on some cheesecake base, add diced apples, drizzle with caramel sauce, and sprinkle with slivered almonds.
  5. Enjoy!
