Tis the season for all things pumpkin. While I love pumpkin bread, pumpkin cookies, and pumpkin muffins - some days I can't be bothered by turning on my oven. Next time you are in the mood for something pumpkin-y, try these mini pumpkin turtle cheesecakes that require no baking! Each pie is an individual serving, making a great snack or dessert that can be grabbed straight from the fridge.

I've only really enjoyed two fall food favorites this season - cider donuts from Michigan and mini pumpkin turtle cheesecakes. Blame it on me being pregnant and not wanting to cook or blame it on me being pregnant and not interested in particular flavors and textures. Either way, we will just blame my lack of pumpkin flavored foods due to being pregnant.

They are also so simple to make that I could even put the task on my hubby, A, to make for me! AND all ingredients can conveniently be purchased at Walmart.

No Bake Mini Pumpkin Turtle Cheesecake

Recipe by a traveling Wife
Prep time: 5 minutes
Total time: 65 minutes
Yield: 6 mini cheesecakes

Ingredients
  • single serve Dannon® Light & Fit® Pumpkin Pie Greek Yogurt®
  • 8 ounces Cream Cheese, room temperature
  • 1/4 cup Powdered Sugar
  • 6 count Individual Mini Graham Cracker Pie Crust
  • Caramel Sauce
  • Pecans, chopped
  • Dark Chocolate Morsels, chopped
  • Reddi-wip®

Cooking Directions
  1. In a large mixing bowl, mix together the yogurt, cream cheese, and powdered sugar. Set aside.
  2. Lay out your 6 individual mini pie crusts.
  3. Spoon a dollop of caramel sauce into each pie crust then fill with cheesecake filling.
  4. Top your mini cheesecakes with a drizzle of caramel sauce, chopped pecans, and chopped dark chocolate.
  5. Allow to set in refrigerator for at least 60 minutes.
  6. Top each cheesecake with Reddi-wip®.
  7. Enjoy!

I'm a grazer! At gatherings, you can usually find me hovering around the food table grabbing a bite of this and a bite of that. I like to sample it all, but my favorite options always are the bite-sized ones. Things like cheese and crackers, fruit, veggies, mini-quiches, petit fours, etc. Those all are my jam!

If you invite me over for a party, you'll typically see me bring in a platter of some small bites - one being these deconstructed caramel apple cheesecake stackers. The stackers are a great option for any party because there is no added sugar, there is no baking involved, and the caramel sauce is sneakily good for you, made with only three ingredients. Plus, who doesn't love cheesecake?!

My surprise ingredient for the deconstructed caramel apple cheesecake stackers is maple syrup. This creates a sweet enough treat without having to add all that extra sugar. And the caramel sauce, it's made with maple syrup, coconut milk, and vanilla extract. Yep, you read that right, just three ingredients for a perfect caramel sauce!

Now let's talk about the base. A traditional cheesecake crust is usually sweet and crisp, but with the addition of the RITZ Original Fresh Stacks, you have a salty, crisp base. Deconstructed Caramel Apple Cheesecake

Recipe by a traveling Wife
Prep time: 15 minutes
Cook time: 30 minutes
Yield: 10 servings (2 stacks per person)
Nutrition (per 2 stacks): 175 Calories | 11 g Carbs | 14 g Fat | 3 g Protein | 4 g Sugar

Ingredients
  • 20 RITZ Original Fresh Stacks crackers
  • 1 can Coconut Milk
  • 3 tablespoons Pure Maple Syrup
  • 1 tablespoon Pure Maple Syrup
  • 1 large Apple, of your choice, diced
  • 1/2 Lemon, juiced
  • handful Slivered Almonds
Cooking Directions
  1. In a medium saucepan, combine coconut milk, maple syrup, and vanilla extract over medium high heat. Bring mixture to a rolling boil and cook down for 15-20 minutes. The caramel sauce will start to brown but is not done cooking until mixture pulls away from pan when scraped with a wooden spoon (see image below). Transfer to a bowl or mason jar and allow to cool for 30 minutes.
  2. In a large mixing bowl, whip softened cream cheese and maple syrup. Place cheesecake base into a piping bag or sandwich bag and cut a corner for piping.
  3. Dice up your apple and mix with lemon juice to stop the apples from browning.
  4. Start building your stackers - place one RITZ Original Fresh Stacks cracker on platter, circle on some cheesecake base, add diced apples, drizzle with caramel sauce, and sprinkle with slivered almonds.
  5. Enjoy!

Cheesecake - who doesn't love it? It's so versatile and can be eaten with almost any type of toppings. Cheesecake can be baked, it can be refrigerated, it can be made full-fat, or it can be made with healthier options. But no matter how you eat it, it's delicious. 

My favorite kind of cheesecake is one that someone makes for me - kidding, but not really! If I need to make one myself, I always go for the no-bake option. Even better if it can be made in under 5 minutes. Have no fear, if you are in need of a cheesecake, I have a five minute recipe for you to make individual sized no-bake cheesecake.

The past few years I have been a lover of making cheesecake with greek yogurt. I used to always use plain greek yogurt then top the cheesecake with some type of pie filling. This way I started out with a plain cheesecake and people could pick and choose which toppings they wanted on top. However recently, I have been incorporating a flavored greek yogurt to my cheesecake to create a decadent dessert.

The five minute no-bake cheesecake recipe only calls for five ingredients. I'm telling you, you could make this in your sleep. The ingredients you will need are Keebler® Ready Crust® Mini Graham Cracker Pie Crust, Reddi-wip® original, powdered sugar, Neufchatel Cheese (cream cheese), and greek yogurt of your choice - all available at Walmart, which is where I bought my ingredients.

First you will want to work with room temperature cream cheese. This will make it much easier to mix and will give you a creamier cheesecake. Then you will whip Neufchatel Cheese, powdered sugar and greek yogurt until smooth. For this particular recipe I used Light & Fit® Carmel Apple Pie Yogurt and it was AMAZING.

I scooped about 1/4 cup of the cheesecake filling into the Keebler® Ready Crust® Mini Graham Cracker Pie Crust. These are perfect for the holiday festivities coming up because everyone can enjoy their very own cheesecake - the crust is my favorite part.

Ingredients:
Keebler® Ready Crust® Mini Graham Cracker Pie Crust (6 count)
- 8 ounces Neufchatel Cheese (cream cheese) 
- 1/2 to 1 cup powdered sugar (I used 1 cup)
Light & Fit® Carmel Apple Pie Yogurt
Reddi-wip® original (as much or as little as you'd like)

Directions:
- Whip room temperature Neufchatel cheese, powdered sugar, and Light & Fit® Carmel Apple Pie Yogurt in a medium mixing bowl until smooth.
- Fill Keebler® Ready Crust® Mini Graham Cracker Pie Crust with 1/4 cup cheesecake filling.
  Optional* Refrigerate for 1-2 hours.
- Enjoy with Reddi-wip® original and a spoon.
